Maple Syrup Oatmeal with Granola

Healthy Granola

This is my favorite go-to recipe for healthy granola! Enjoy it as a nutritious snack by itself, or have it for breakfast with some fruit, milk, or yogurt!

Ingredients  

  • 1 cup whole rolled oats*
  • ¼ cup chopped walnuts
  • 1 tbsp melted coconut oil
  • 2 tbsp maple syrup
  • 1 tbsp creamy almond butter

Instructions

  • Preheat your oven to 300°F and lay out a parchment-lined baking sheet.
  • In a medium bowl, blend oats, walnuts, and coconut flakes (if you fancy) with dashes of cinnamon and salt. Drizzle in coconut oil, maple syrup, and almond butter, mixing until fully combined.
  • Spoon the granola mix onto the baking sheet, shaping it into a thick circle about an inch high to encourage delightful clusters.
  • Bake for 15 minutes, then give the pan a spin and gently tease apart the granola with a fork. Continue baking for another 15 minutes or until it reaches a golden hue.
  • Let it cool for 15 minutes before serving, allowing the flavors to meld and the crunch to set. Delight in your unique, homemade granola creation!

Notes

*If you're gluten-free make sure you get oats that are labeled as Certified Gluten-Free. Oats are often processed in factories with gluten, so it's important to look for that label.
